- 1 cup rice, uncooked
- 5–6 cups small diced sweet potato, about 2 small sweet potatoes
- 1 tablespoon olive oil
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon granulated garlic
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 (15 oz) can black beans, drained and rinsed
- 2–3 cups chopped baby spinach, cut into small pieces.
- 2 cups chopped purple cabbage, chopped finely
- 1/2 pickled pickled red onion, diced
- 1 cup feta cheese
- 1/2 cup dried cranberries
- 1/2 cup roasted and salted pepitas

- 1 lemon-fresh juice
- Salt & Pepper to taste

To Make Your Own: Fall Salad
- Preheat oven to 425. Dice up your sweet potatoes. Add to a bowl and mix together with all your seasonings (Garlic, Onion, Paprika, Cumin, Salt and Pepper) and olive oil. Bake approximately 25-35 min.
- Cook your rice and set to the side. Here is a great recipe for making perfect rice.
- Take all your salad dressing ingredients and mix together. A whisk or emersion blender works great for this.
- In a large bowl mix together the sweet potato and black beans. Gently mix in the pickled onion, cabbage, spinach. Top off with the feta, cranberries and pepitas.
- Mix in Salad dressings and divi up.
