To Make Your Own: Fall Salad

  • Preheat oven to 425. Dice up your sweet potatoes. Add to a bowl and mix together with all your seasonings (Garlic, Onion, Paprika, Cumin, Salt and Pepper) and olive oil. Bake approximately 25-35 min. 
  • Cook your rice and set to the side. Here is a great recipe for making perfect rice. 
  • Take all your salad dressing ingredients and mix together. A whisk or emersion blender works great for this.
  • In a large bowl mix together the sweet potato and black beans. Gently mix in the pickled onion, cabbage, spinach. Top off with the feta, cranberries and pepitas. 
  • Mix in Salad dressings and divi up.
  • Enjoy with everyone around you.
